About This Sbrisolona
Sbrisolona is a traditional, rustic Italian almond crumble cake originating from Mantua in Lombardy, with roots tracing back to the 16th century. Its name derives from the local dialect word brisa, meaning “crumb,” a nod to its intentionally brittle and crumbly texture.
Made with butter, cornmeal, white flour, and almonds, it is a rich yet rustic cake that sits somewhere between a pastry and a cookie. True to tradition, it is meant to be broken by hand rather than sliced, and enjoyed with espresso, dessert wine, or gelato.
